Masa please! Our proximity to fresh fish has been a boon to Portland’s sushi community for years, but Masa Miyake has upped the ante on incorporating local ingredients into exotic foods, and he’s clearly taken the avant-garde morals of Ratatouille to heart. Pork belly, uncured sea urchin roe, and freshly foraged mushrooms (by the man himself) are primed to astound. Bring in a bottle of sake, have a seat, toss the menu aside, and leave yourself in the master’s hands.
